throughout the day so that my body can absorb them as well as possible; i try to take a dose, if possible, with each meal.

It's a little hard to keep track of exactly when to take all of them - for example, most are to be taken with a meal or shortly after, but Bromelain should be taken before a meal on an empty stomach if possible so that it is absorbed into the bloodstream instead of being utilized by the digestive system as a digestive enzyme, which is what happens when you take it with food.

Just use the guidelines on the labels as a starting point. Other than Fenugreek, there's little worry about taking "too much." Just take as much as you can afford to supply yourself, as often as possible, basically.

Some of these things you can also get in your diet. Some will disagree, but I think that almost anything that is "hot"/spicy has inflammation-fighting properties. Also, ginger is great for EP/PR sufferers on several fronts including fighting inflammation and supporting the immune system; you can get it with japanese or other asian food. I frequently eat vegetarian maki (similar to sushi) rolls from one of the local Japanese restaurants and pile on plenty of pickled ginger -- it seems to help at least as much as the encapsulated form and is pretty tasty IMHO :-)

When I have enough money to afford the whole spectrum of supplements, I can take a dozen-odd pills 3-4 times a day. It's a pain in the butt, but it's better than having the REAL, literal pain in the butt/groin/hip/thigh be worse!
